I smell something fishy; Want new ways to cook up fish; OK! I LOVE ZUMBA~

What a quiet and uneventful weekend.  I spent the day sleeping, hanging out with my niece and nephews an honey.

I guess WILDFIRE is back in the picture.  She is a mean one.  :)  I got up on the right side of bed and in 10 minutes tripped and started an argument with Rod.  It took talking to a sweet, caring friend, who just by lending a pair of listening, non-judgemental ears helped calm me down.  I am proud of myself for not: breaking anything, walking away and let it ride.  Came back, talked about it and you know what - we good now.

I did not exercise all weekend.  My feet were a bit sore.  I bought some new gel insoles for my shoes for Friday’s Kickboxing and Zumba class.  They worked ok.  Instead of pushing the envelope, I allowed my feet to rest.

HOLLY - OK I AM LOVING ZUMBA!!! :)  Second class and me likey likey! :)

I’m good to go for Monday’s Kickboxing, weights and Step combination.  I am ready to modify out anything that would be a lot of weight on my feet to aggravate them.  I think it’s the current kickboxing round - it requires us to be on our toes more so then utilizing our whole feet - thus I can feel it but I do know how to work with it.  But I am a pro at making it all work for me and with two days of rest in - I’m very happy with how it feels.  Yes, cautious cautious is the best way to proceed.

I love love love love love love seafood - especially fish.  I am a fan of tilipia  - cheap, easy , verstile and it’s sooooo good.  I tried to grill some catfish this weekend; my sis and I were so hungry we ate it a bit raw - back on the grill it went.

Bascally I keep my cooking style simple - 1 grill, some PAM, grill and with some rice and fish sauce I’m good.

My question is, what fish do you love (if any) and how do you cook it?  IDEAS!!!!!!!

    My fishes:
Haddock-we buy it Atlantic iceberg I think, from trusted waters…can’t remember but I think that was it. My mom has grilled it (on a grill) baked it and even fried it.
Flounder-flounder is so good! We tried to grill it but it falls apart, frying works…we haven’t tried baking it but I want her to bake it…much healthier!
Salmon-we buy the pink canned salmon and my mom makes salmon patties out of it. She takes out the bones and other little things, then mixes the salmon with egg, crushed crackers and maybe milk…
This is much different from the salmon I ate at applebees once. I think they just cooked theirs without all of that. Both tasted good to me.
Then of course I love tuna and mix it with a little mayonnaise and onions and put it on my bread. A healthier version would use mustard, I tried this once and it didn’t work.
Swedish fish-lol ;) but they have more sugar and probably no protein? But I love these too! No preparation!

I am a fish lover. California had the best fish, I don’t usually bread, just real butter and lemon and baked. My favorite in Ca was shark. My favorite on the East coast is blowfish. Like chicken!!!! Oklahoma, Catfish is big but not too tasty, and the lakes are really dirty. I must know what Zumba is. Thanks for the great reading.

YEA!!!!! I knew you would love it.
The only fish I make is tilapia and salmon and I usually either put Mrs. Dash and broil it or I put lemon and olive oil on it and broil it. I love that crust broiled fish gets.
Being in the middle of Kansas doesn’t really allow for much more!
Actually when I do zumba and my toes hurt because a lot of the advanced moves make you go up on your toes so I went out and bought shoes that are meant for dance exercise. Either cheerleading or dance is what they will say they are used for. They have a soft arch and extra rubber at the toes. It’s helped a lot. I got mine from nike online.

I can’t help you with any fish ideas…I don’t eat any. Just never did like it.

I hear ya on WILDFIRE!! OMG!!! It has not been a fun day at my house. I wouldn’t blame anyone for not wanting to be around me @ this time…it’s ugly!!! Can’t wait for this to pass.

Glad you had a relaxing weekend! Have a good week!! :)

Glad you love Zumba!! My faves in fish are tilapia and salmon, I grill or microwave them with lemon herb seasoning, and that is it. Very simple and good! glad your friend helped with your and Rod. Aah, Wildfire, we love you too!

Mmm…salmon, with a teeny bit of olive oil, salt & pepper, baked. Last night I threw some capers on it for a change, but usually, just plain. It’s the cheapest and easiest fish to get in the Pacific NW! :-) I eat it maybe 2-3x a week!

I love baked fish… any fish….. whiting, place, salmon (but that usually tastes best broiled).Monk fish is gorgous with a tomatoe and mustard sauce… yum yum!

Salmon. I get a file, or I file a whole fish myself, then let it marinate 30 min or so with lemon juice and whatever spices I feel like, and put it under broiler for like 6 to 8 min depending its thickness.

I also started making Thai fish curry lately, and we love it.

I also like haddock. I use it in fish soups, asian style (don’t like creamy ones). Perto-rican fish stew is one of my favs as well!

I love all kinds of fish - tuna and salmon are probably my favorites. I like to pan-sear the tuna with the smallest amount of olive oil or sesame oil. Salmon - simply bake in the oven with a little dill and garlic/onion powder. My produce department sells a little tube of dill that’s more flavor than dried, and lasts a little longer than the fresh stuff. WOrks great - of course I also love shrimp - one of my favorite dishes is to sautee the shrimp in a little oil with some fresh garlic, remove the shrimp, and add 2 cans of diced tomatoes, basil, italian seasonings and about 1/2 cup of white wine - let that reduce down and then toss it with the shrimp and some angel-hair pasta and a couple of tbsp of grated parmesan or pecorino romano - yum!

Salmon and Talapia!!! Both cooked this same way….

I take some foil and put it down on the counter. (Big enough to wrap around the fish). Then I top it with fresh tomato, bell peppers, cilantro, onion, and frsh jalapenos *for a kick*. I put a generous amount of fresh lemon juice on top and then leave the lemon on top of it. I sprinkle it with salt, pepper, and either garlic powder or cajun seasoning then I wrap it up pretty well in the foil and cook it either on the grill or in the oven. It is really good and this works on pretty much any kind of fish or chicken. It is best with a huge salmon cooked on the grill. Just be sure not to over cook it. You can serve it over Uncle Ben’s (Microwave in a Bag) Whole Grain Santa Fe Rice. It’s GREAT!!

    HAVE FUN TONIGHT!
    Kickboxing is my new favourite.

I took cook my salmon in tinfoil
It keeps it nice and moist that way and you can add whatever seasonings on top that you like.
Onions peppers and lemon are good too.

You were smart to give your feet a break and I know you’ll modify tonight if you need to.
I like how you are so smart that way.
    Live and learn eh?

“HOLLY - OK I AM LOVING ZUMBA!!! :) Second class and me likey likey!”

YAY! I had a sneaky feeling u would like it once u got more into it :) U do not seem to have met an excerise regimen you havent liked ! Guess what, Nancy? Guess who is joining a fitness center this evening? It is ME! I am skipping school (I allow myself one time a semester) to sign up and begin!

  19. PaulaKay @ October 27th, 2009

Hi Nancy! We are big fish eaters at my house. I have moved away from baking fish because I don’t like the soggy consistency you often get. Catfish is very hard to grill because it has a high water content. However, I have found a few tricks that help. First, I try to buy the thickest catfish fillets I can find, and I trim off the thin parts at the end. Then I bought these great little fish baskets made especially for the grill. I think I paid like $2 a piece for them at Wal-Mart several years ago. They hold your piece of fish snugly in this wire basket with a handle so that flipping them is a piece of cake and you don’t end up with your fish falling apart in chunks and sticking to the grill or falling in the coals. Halibut and trout both great on the grill (grilled trout is one of my favorites), as does swordfish and sea bass. When I can’t grill, I prefer to pan sear/blacken my fish in a cast iron skillet. Yum!!

Oops! Forgot to mention. When grilling catfish, I also wrap each trimmed piece in paper towels and pat/squeeze as much water out as I can before I season them for the grill. This helps them hold together a lot better, too.
